Growing up I learned what I know of cooking by watching my mom (a very sterling cook) prepare meals over the course of years. I’ve since become a bit of an amateur foodie with aspirations of being able to prepare more complicated dishes at home.

One thing that has always been frustrating, however, is a lack of any formal instruction or technique. So when I bought the book of Pepin’s “Complete Techniques” I was involved to learn. Alas, I realized that even with gloomy and white photos accompanying each of the steps, there were a lot of things I simply didn’t understand, or could only guess at what was meant.
Cue this DVD spot — I stumbled upon it looking for other editions of the book, and ordered it immediately. Since its arrival a few weeks ago I’ve watched it many times and I’ve subjected at least a dozen people to scrutinize at least the omlette-making lesson.

This DVD is far and away the best thing that has happened to my cooking skills in the last ten years. Humans learn by imitation and it’s mighty easier to learn when watching someone actually doing and walking you through the technique than trying to read it out of a book. All the TV shows and specials gloss over the fundamental techniques you need in order to bag anywhere. As in all arts, without a estimable recall of the basic moves, you’ll bag hopelessly lost very snappily when you attempt anything beyond the remedial.
I can’t recommend this DVD state highly enough if you, like me, have always wanted some kind of cooking “training” but can’t invent the time to go to a class or seize lessons.
i’d like to commence by saying that nobody has influenced my cooking more than jacques pepin, put maybe my mother, and i cannot mediate of one person who is technically more able than he in the kitchen. if you’re familiar with his cooking, you know his technique is flawless. After all, he is the man who wrote this book, which makes him the logical choice for a DVD of techniques.
but unfortunately this status of DVD’s is not a companion to his book – not even discontinuance. what you secure here are outtakes from various PBS specials/series, hacked and edited into short clips that indicate you how to do various tasks in the kitchen. this doesn’t sound so abominable in theory, but the selection of techniques themselves are not terribly varied – a LOT is left out. as others have mentioned, there is no ‘play all’ feature, which makes watching all the clips a chore. the menus are poorly laid out, and some of the “thunder” of this position consists of recipes literally written on the shroud – no video of preparation, nothing. it’s not that what you seek is a poorly explained or performed technique – quite the contrary – it’s honest that the presentation and the completeness of protest is subpar.
in fact, a majority of the techniques found in this station can be seen performed & explained by jacques during the episodes of his Mercurial Food My Diagram series, which is also available on DVD. if you purchased that place – or watched it on PBS – you could seize up almost everything contained here, as well as spy him prepare a multitude of dishes. i deem it would be worthy more valueable to someone wanting to seek these techniques in action. it’s an noble series and i would highly recommend it.
i understand it’s unreasonable to seek information from a re-creation of his complete techniques book on DVD – such a task would be massive and costly. i also understand that someone who has very puny technical training in the kitchen could buy up quite a bit from these DVD’s. they are in no draw useless. i objective feel that the presentation and squawk is sorely lacking, and found this to be a rather lackluster disaster on the fragment of PBS. they should invent a series with jacques based on this premise and publish it in its entirety, rather than try to place something together piecemeal.
* updated 10/7/09: i stumbled upon this region a couple of nights ago, and decided to view it again to glimpse if my impressions had changed at all. in retrospect, i believe my rating was a bit harsh. i’d bump it up to three stars if i could. there are a couple of reasons for this: first, there are techniques in here that you don’t peep in his regular episodes, some of which will reveal valid to home cooks, and it’s qualified to be able to eye them somewhere. second, and more importantly, i started thinking about the value of this position to someone who’s really original in the kitchen. i reflect that despite the layout issues with regard to the dvd menus (which are mild honest as dreadful as i remembered them), it would be qualified for someone fresh in the kitchen to work their device through these discs. they’re not flawless, but there’s enough well-known information here to accomplish it worthwhile. finally, there are some things contained here that fair need to be documented before everybody forgets how to do them! deboning an entire chicken – and keeping it in one allotment – immediately comes to mind. also, the often tried and seemingly never duplicated .0003 second french omelette is as mind blowing as ever. it’s satisfactory that you can unprejudiced assign these clips on and behold them over and over again to try and mimic the technique.
so level-headed not the greatest package in the world, but i judge until something better comes along this is worth your time. especially since it’s inexpensive. (i collected contemplate we need some type of jacques pepin meets harold mcgee technique/food science series to aid home cooks better understand WHAT they’re doing in the kitchen and WHY. KQED i’m looking at you!)

Now that DVDs are draw down in tag, I’ve ended up with literally thousands–I mediate. I have a tendency to resist the earlier releases, the ones that are obviously “cheapies” with no special features–I know that better editions are impartial around the bend for most films! But I recently had to obtain an exception for “Poltergeist”. Now I had originally seen this film in a theater on its release. I have always considered it one of the best in its genre. I’ve seen it a couple of times since, but probably not at all in the last ten years (and for the record–all the sequels were awful) .

What amazed me was that I collected idea it was a terrific movie! Now, some people will assume a couple of the effects are cheesy–and for today’s standards, maybe they are. But they are so well integrated into the film that I don’t deem the recent viewer will mind. And I own films are historical documents–I despise that George Lucas, for example, has corrupted his films with constant CGI updates. It’s as sacrilegious as colorization was!
“Poltergeist” succeeds as a sizable film due, in astronomical section, to it’s unrelenting suspense–but, in equal measure, it relies on us to care about the family alive to. I believe the movie endures because it has heart and characters to actually root for. Craig T. Nelson and JoBeth Williams are gargantuan (and believable) as the parents affected. Their worship for each other and their family, and their willingness to sacrifice anything for the safety of their kids is well presented and acted. Williams, in particular, has never been better. At first, she is your typical suburban Mom–but as weird things launch happening, you peruse her confusion, her delight, her awe, her dismay, her desperation and her valiant side. It’s a very nice underrated performance. And Beatrice Strait and Zelda Rubenstein both give richer, more fully realized performances than I remembered.

Who’d have thought–all these years later–that it’s the characters of “Poltergeist” that have eminent it in my mind?
It’s time now! We need a Deluxe Version DVD. It’s hard to own 2007 will tag 25 years–that seems a fitting opportunity to honor a film that has stood the test of time. I’ll be first in line to upgrade. KGHarris, 9/06.
This is one of my popular movies, and I’ve reviewed the earlier DVD impart elsewhere. My review this time is purely for the unusual DVD reissue which is one of the biggest disappointments I’ve reach across. Let’s initiate with this “25th Anniversary.” The only mention of the anniversary is a haphazardly placed sticker on the outer sleeve. The fact that it was objective slapped onto the box gives the buyer an conception of how distinguished concept went into this unusual DVD.
Then there are the extras. A documentary about true-life hauntings. Okay, that’s not abominable. But wait – where’s the current trailer for the film that was on the earlier DVD? It’s been removed. Did the trailer earn sucked into Carol Anne’s closet and is being held captive by the Beast? What purpose did removing the trailer aid?
This is a pointless release. My advice is to hang onto the earlier release which is anamorphic AND has the trailer and skip this one; there will be another, hopefully better, release someday. Warner Brothers should be ashamed.

“Seinfeld” did a graceful apt job rebounding from Larry David’s departure from the display. Jerry doesn’t have as many segments featured around him this season, possibly because of the stepped up demands on his time late the camera. However, the ones in which he is featured are very silly. For example, Jerry has a check bounce, and the tainted merchant puts the returned check on expose in his store. Word gets encourage to Jerry’s parents, and they jump to conclusions and choose that Jerry must be broke. Jerry’s dad decides to return to work to encourage relieve Jerry. Unfortunately, the job his dad takes is working for Elaine, and the spot doesn’t work out for anyone.

George, reeling from the mixed emotions he had at losing Susan at the extinguish of season seven, prepares to go on without her, but finds that he really can’t. Instead, Susan’s parents open a charitable foundation in her memory and have George installed on the board with a vast framed photograph of Susan framed on the wall in the room where the foundation meetings are held. Later in the season, George does meet a woman he is fervent in, and she seems to be keen in him. George, always trying to better his plot through lying but usually unprejudiced worsening his lot because of it, does the same thing in this instance. The woman believes George is a tourist from Arkansas, and George decides to continue the deception by faking a recede to the city so he can continue the relationship. The diagram George sees it, if you condense everything he has accomplished in the last ten years into unbiased a few weeks, it seems quite impressive.
Elaine enters an alternate universe when she meets Kevin and his friends, who turn out to be the opposite of Jerry and his friends in every map. She likes the fact that Kevin and his friends inspire her to be a better person – they are genuinely kind and valid and they bask in reading. However, ultimately Elaine is impartial not chop out to be among them because of her hold selfish personality traits. Perhaps the funniest episode featuring Elaine is “The English Patient”, titled after the Best Represent winner of 1996. Her boss, the eccentric Peterman, loves the film and forces her to go notice it with him. Elaine hates the movie, and objective can’t retract sitting through it in its entirety without blurting out how she feels. Peterman gives her a chance to do penance for her dreadful attitude which involves a most hilarious assignment. In “The Susie”, due to a series of mix-ups, Elaine winds up with an alternate identity at work – “Susie”. Her coworkers originate discussing her as though Elaine and Susie are two different people. Her ultimate solution to the plight is to have Susie “die”, complete with a memorial service for the fictitious woman that winds up packed with mourners.

Of course, Kramer’s adventures are as wonderful as ever. This season his apartment turns into “The Red Planet” due to a neon impress from the Kenny Rogers Roasters restaurant intelligent through his window all night. At first he is doing everything he can to save the restaurant out of business, but when he and Jerry temporarily switch apartments the pressure is off, and Kramer finds himself addicted to the restaurant’s food. In another episode, Elaine’s boss Jay Peterman is trying to write his memoirs, but finds his enjoy life isn’t very moving. His solution is to prefer Kramer’s life myth and spend it as his hold. Kramer and Peterman eventually gather into an argument over the details of the draw, and Kramer answers abet by starting his absorb “Peterman Reality Tours”. Finally, Kramer is incensed by the fact that he can no longer collect a public area in which he can light up a cigar, and opens a smoking lounge in his maintain apartment. As a result of all of the exposure to tobacco smoke, Kramer ages prematurely and goes to his attorney friend, the fast-talking and flamboyant Jackie Chiles, to file suit against the tobacco companies. When Kramer negotiates a deal with the tobacco companies without Jackie’s approval, Jackie declares the results to be “the most public of his many humiliations”.
In summary, this season is very marvelous with more of an emphasis on fast-paced zaniness rather than the comedy that made more of a commentary on human nature that you saw during the Larry David years. However, I unruffled highly recommend it.
It’s the first without Larry David, but this eighth season of “Seinfeld” is detached friendly. Certainly the departure of its co-creator, executive producer and longtime writer changed the note — there’s a faster walk, more fantasy storylines and more slapstick humor — but the actors (especially, in this season, Julia Louis Dreyfus) are unexcited so in their zones that every episode is fun to behold.
In fact, many Season Eight episodes are among the show’s best ever. “The Exiguous Kicks” features Elaine’s wrong dancing. Kramer gets alive to in cockfighting in “The Diminutive Jerry.” Elaine discovers the menace of muffin tops in, of course, “The Muffin Tops.”
